While Fridays are traditionally date night, there are times in life that call for spending an evening with girlfriends. Whether going out to dinner or staying in to watch a movie, there’s no better cure for life’s knocks than spending some quality time with friends. Last Friday, one ICE recreational class offered just that opportunity. ICE Chef Instructor (and alum) Tia Cannon put together a menu for hosting a girls’ night in, rather than out.
The students in class celebrated a huge range of female relationships. From moms and daughters to lifelong friends, it was a chance for everyone to come together over some great food. On the menu was a selection of small appetizers perfect for snacking on during a party with ones closest friends — curried chicken salad, beef satays, beet and goat cheese napoleons (garnished with some feminine flowers). Plus two delicious cocktails made with sparkling wine.
The evening also included a specially crafted playlist of songs selected just for a night in with the girls. Chef Tia included hits from Aretha Franklin, Dolly Parton and Madonna — strong, independent ladies, though I’m pretty sure even they need some help from their friends every once in a while.
